Mind Blowing Italian Meatballs

I can’t take the credit for the recipe, but OH MY WORD Y’ALL, these are amazing. And very filling!

  • 2 lbs ground beef
  • 2 oz. grated parmesan cheese
  • 1 egg
  • shake or two or dried red pepper, to taste
  • ½ tablespoon dried basil
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 14 oz. canned diced tomatoes or whatever you have
  •  2 big handfuls fresh spinach
  • 8 oz mozzarella cheese
  • 3 T heavy cream
  • olive oil for cooking the meatballs
  • salt and pepper or Adam’s Fajita seasoning


  1. Turn on the broiler.
  2. Place ground beef, parmesan cheese, eggs, salt and spices in a bowl and blend thoroughly.
  3. Form the mixture into meatballs, the size of a golfball.
  4. Heat up the olive oil in a large skillet and sauté the meatballs until they’re golden brown on all sides.
  5. Lower the heat and add the canned tomatoes. Let simmer for a few minutes, stirring every couple of minutes. Then add spinach and cream and lightly toss.
  6. Season with salt and pepper to taste.
  7. Top with parsley and mozzarella cheese and then put under the broiler for 5 minutes or until the cheese starts to brown.
  8. Serve and enjoy!!


Let’s Talk Chicken Feet!!

But, let me share with you the actual value of those freaky looking chicken feet!

Chicken feet don’t have any actual meat on them. They are primarily cartilage and bone. Chicken feet produce a broth that is full of the awesome ingredients that make a good broth so nourishing: collagen, glucosamine chondroitin and trace minerals.  AND a chicken or bone broth with chicken feet will make the broth gel beautifully. You want that.

Yesterday, I harvested some chickens for a family and the grandmother wanted the feet.  It’s definitely easy enough, but tedious. Sometimes, that’s just hard. But I accidentally found a secret to make it easier and less tedious.

I had already simmered the feet for 32 seconds (no, seriously), and put them immediately into a big bowl of ice water.

I was peeling away when I remembered that I had to be somewhere and needed to leave NOW.  But I wasn’t going to be long, so I left the feet in the big bowl of ice water for about an hour, maybe hour and a half.

I returned home and picked up where I left off and wow! They peeled way easier then before soaking.



Soak your feet too while you wait, but not in ice water….


Nutrient Dense FAST Soup


Last Sunday, I had a good opportunity to go deer hunting and ended up SICK with a fever and completely miserable! All week I was sick off and on and it was awful and truly no fun!

This soup helps to clear out the fridge AND can help boost your body with great nutrition when you’re sick or starting to feel run down.

Don’t feel compelled to use only what I list that I used, it was seriously a fridge clean out combined with a lot of garlic!

Here’s what I used and how I did it.

1 medium yellow onion

1 head of garlic – I wasn’t joking! LOL

4 or 5 stalks of celery

3 beets and greens

4-6 carrots

3 roma tomatoes

1 patty pan squash that just needed to be used

Sweet potatoes, regular potatoes, butternut squash are good in this as well.

salt, pepper, garlic powder

I was SICK! So instead of standing there chopping stuff, I cut into big chunks and used the food processor. img_4710

Everything will be pureed at the end, unless that freaks you out, then chop into whatever size makes you happy.

Use a heavy pot and add a few Tablespoons of Olive Oil, saute the onion, celery and garlic until the onion is translucent.

Add the rest of the chopped veggies and mix them in to coat them with the olive oil and onion mix.

Add JUST enough water to cover the veggies. Use bone broth if you have it on hand for extra nutrition.

Simmer until the carrots or beets are fork tender. I test the hardest veggies.

Using a stick blender, blend really well.  I always think that my body needs to have more liquids then solids when I’m sick so it has less to deal with for healing. That may just be silly, but I also love this blended. It’s so creamy!

Add seasoning to taste.


My Weird Toothpaste Recipe


Every once in awhile, I fall into a dental hygiene or toothpaste conversation and get asked for my recipe.

My purpose is of course, cleaning my teeth, but I want prevention happening, healing of any problems happening, killing germs (dental germs FREAK me out) and I want pretty, white teeth! Is all this too dang much to ask for?? NO!

And because I despise needing a recipe and having to scroll 2 miles before getting to it, I’m going to assume that you can mix stuff together without pictures and just write the recipe!


2 tsp unrefined sea salt  *AMAZING minerals

2 tsp aluminum free baking soda *mild abrasive and stain removal

4 Tbs Bentonite Clay *minerals to help remineralize teeth, detox and fight gum disease

2 Tbs Activated Charcoal *great whitening by absorbing stains, balances pH in the mouth, aids in remineralization of teeth. 

10 drops of Thieves Vitality essential oil  *a blend of Clove, Cinnamon Bark, Rosemary, Lemon, Eucalyptus Radiata (google those ingredients and it will blow your mind!)

10 drops of Copaiba Vitality essential oil *reduce pain, inflammation, stop fungus growth, prevent infection, prevent cavities by eliminating bacteria commonly found in the mouth. So gross. 

10 drops of Peppermint Vitality essential oil *fresh and tasty, clears up any stuffiness, deals with bad breath, pain reliever, aids in digestion.

Leave as a powder or mix in enough coconut oil to make a paste. *google oil pulling for more info on the power of coconut oil for the health of your mouth! Oil pulling is a great way to start your day, it will remove all kinds of funky toxins from your mouth and even pull from your sinuses, which sounds disgusting, but hey, get your day started off with having a clean mouth and clear sinuses!

Matthew 25: 14-30 The Parable of the Talents

My son-in- law was here during Thanksgiving and we were discussing Young Living Essential Oils and what he said, was so exactly and solidly correct. He said, “essential oils just fits into everything you are already doing.”

Y’all! He is right! Not only for my life, but for anyone’s! They fit because they are natural and help to make lives better. To make health better.

Young Living isn’t just about essential oils. Young Living is about your holistic health. Taking care of your WHOLE body and all the systems within your body.

That is also my farm goal. For the soil on my farm. For the rabbits on the grass on the soil of my farm. For the chickens free ranging bugs and seeds on my farm. For my goat, for my gardens, for my life… does that make sense?

Do you remember The Parable of the Talents? (Talent was a term used for a weight or unit of coinage.) A man gave one servant 5 talents, another servant 2 talents and the last servant 1 talent. So the last servant has made history and seriously taught me some lessons. The first two servants invested and made more money from their gifts. The last servant buried his. He hid it in fear of doing wrong. Of messing everything up. Y’all. HE SQUANDERED HIS GIFT. He wasted his opportunity.

I do not want to squander any gifts, my life or any opportunities. I’m striving to be a good steward of all the talents that my Heavenly Father gives.

So when I look at my entire body, I want the best possible products, the best possible solutions to any problems.

I want that for my animals, for my dog Steve, for my children, for the food that I grow and raise.

Where Essentials of Living Began

I’m going to be honest. I was seriously tired of hearing people talk about essential oils. I did not want to hear anymore.

See, I’ve been using herbs and essential oils for about 15 or 16 years. So when the ‘fad’ hit, I was way beyond the entry level. Vegetarian Freezer Crock Pot Meals

One of my biggest challenges when I decided to give up meat was finding or creating quick and easy meals for the whole family. A roast with veggies, a beef stew, shredded Mexican chicken for enchiladas and a protein rich chili were all in my meal rotation and without those, I felt kind of lost. I was pretty sure healthy, family friendly and quick vegetarian meals were just a myth. After searching pinterest and a few unsuccessful attempts, one of my biggest challenges when I decided to give up meat was finding or creating quick and easy meals for the whole family. A roast with veggies, a beef stew, shredded Mexican chicken for enchiladas and a protein rich chili were all in my meal rotation and without those, I felt kind of lost. I was pretty sure healthy, family friendly and quick vegetarian meals were just a myth. After searching pinterest and a few unsuccessful attempts, I’ve started to compile a pretty good list of meatless meals that are not only quick and easy to throw together, but also healthy, family and freezer friendly! Whether you’re vegetarian or just looking for an awesome recipe for Meatless Monday, these meal ideas are sure to be a quick and easy crowd pleaser!

  • One of my favorite ways to sneak a ton of veggies into my toddlers diet is this crock pot spaghetti sauce. If you have a food processor this recipe has a pretty short prep time and you can’t even taste the vegetables. You can divide this into freezer bags or put into jars to store in the fridge. I use this sauce in goulash, add it to chili in place of the diced tomatoes, and into other meals throughout the week.



  • This crock pot chili is a really hearty dish and is great for the cooler weather! The pinto, black and red beans add a good amount of protein and fiber and is a good base for whatever toppings or veggies you choose to add in. You can either toss the ingredients in the crock pot before you leave the house or dump them all into a freezer bag before or after the cooking process to make meal prep a breeze.


1 cup pinto beans
1 cup black beans
1 cup red beans
1 cup lentils
1 can diced tomatoes
1 onion, diced
1 ancho chili pepper, diced
2 cloves garlic, minced
Chili powder to taste
Cumin to taste
Salt and pepper to taste

Put all ingredients into crock pot. Cover with water and cook on low for 8 hours or high for 4-6 hours.

  • This recipe isn’t a crock pot meal but can be frozen for a short amount of time and it’s well worth the effort! I’ve made this pot pie with and without meat and it’s delicious both ways.



Garlic Confit

garlic confit 5WHAT THE HECK IS CONFIT, you may be asking?

Wikipedia defines it:

Confit (French, pronounced [kɔ̃fi] or in English “con-fee”) comes from the French word confire which means literally “preserved”;[1][2] a confit being any type of food that is cooked slowly over a long period of time as a method of preservation.[1]

Confit as a cooking term describes when food is cooked in grease, oil or sugar water (syrup), at a lower temperature than deep frying. While deep frying typically takes place at temperatures of 325–450 °F (163–232 °C), confit preparations are done much lower—an oil temperature of around 200 °F (93 °C), sometimes even cooler. The term is usually used in modern cuisine to mean long slow cooking in oil or fat at low temperatures, many having no element of preservation such as dishes like confit potatoes.

In meat cooking this requires the meat to be salted as part of the preservation process. After salting and cooking in the fat, sealed and stored in a cool, dark place, confit can last for several months or years. Confit is one of the oldest ways to preserve food,[citation needed] and is a specialty of southwestern France.

Instead of meat, we are using GARLIC! there is POWER in garlic, isn’t there? I mean, really, who doesn’t like garlic? even a little? how about garlic infused oil? that’s some goodness right there!

So you are going to need quite a bit of fresh garlic for this.garlic confit Or I have seen bags of peeled cloves at the store, so if you are appalled at the thought of peeling garlic, that may be a great choice for you, although, I have a great technique for peeling garlic. Loud as heck, but very effective technique!

You can use two stainless steel bowls, but I can’t even figure out how to hold onto that, so I use this super cool pot that I picked up an estate sale for $4… it’s really got more uses then to help peel garlic, but for today, right now, it’s the magic garlic peeler.

I used 4 cloves which was about 2 cups of cloves, but halving or doubling works out perfectly, you just may need to split up the amounts so there isn’t overcrowding in the pot. Also, the goal here is to shake it up and down to bang the garlic against the insides of the pot to knock the peels off, it’s not a strength exercise. I’ve mistakenly asked a ‘male person’ to do this for me and the garlic cloves were broken, oil from them everywhere inside, sticking to all the peels and it was a mess, so just do it yourself. If you are a male person, don’t be too vigorous, you’ll kill it.

Once you have all your nicely peeled garlic cloves, put them in a heavy pan. I use a small pressure cooker pot, but that’s really a bit tall, but it works. I like the weight of it for this.

Next, add your olive oil to the cloves. If it’s not covering the cloves, add some more. There is some leniency to this. I added 1.5 cups first, then added another half cup, so 2 cups total. It’s really all about the size of the cloves, so don’t be too serious about this. It will work out!

Heating this is not a high then low game. Start at low/med. Your goal is 200-225 degrees, never allowing this to boil. Remember, LOW AND SLOW for confit.

Keep the temperature range in the lower 200 degrees for an hour. Then just turn off the heat and let it sit until room temperature.

Pour it all into a jar that is manageable for use. You will want to be using those cloves, which are now very soft and user friendly! You also want to be using the infused oil!

garlic confit 5Above is the oil not yet refrigerated and the oil refrigerated. Anytime you use fresh herbs or garlic, onion, versus dried, you need to refrigerate since there is water in the fresh products, which will grow bacteria and it will become rancid and or mold. YUK! So, DEFINITELY refrigerate this!
